Delicious summer chicken dish with fruit salsa
Ingredients
Chicken Breasts
1/2 tsp finely shredded lime lime peel
2 Tbsp lime juice
1 tsp lemon-pepper seasoning
2 cups chopped watermelon*
1/2 cup chopped cucumber
1 cup sweet corn*
1/2 cup chopped bell pepper
1 chopped jalapeno pepper
1 Tbsp red onion chopped*
1/2 tsp finely shredded lime peel
2 Tbsp lime juice
1 tsp packed brown sugar
1/4 tsp salt
1/4 tsp crushed red pepper
Directions
1. For salsa: in medium bowl, combine watermelon*, cucumber, pepper, corn*, jalapeno, and onion*. In another bowl, combine 1/2 tsp lime peel, 2 Tbsp lime juice, brown sugar, salt, red pepper. Add fruit/veg mixture; toss to coat.
*FODMAP substitutes:
Watermelon --> Canteloupe
Corn --> Strawberries/Blueberries
Red onion --> Green Onion
2. For chicken: marinate chicken in bag/bowl combine lime peel, lime juice. Sprinkle the chicken with lemon-pepper seasoning when ready to grill (or fry).
Serve Chicken with salsa.
