Flavorful herb chicken easy to make and best served with mashed potatoes
Ingredients
3 cloves garlic, minced
1 tablespoon dried basil leaves
½ teaspoon pepper
¼ teaspoon salt
1 tablespoon lemon juice
2 tablespoons olive oil
2 chicken breasts
Instructions
1) In plastic baggie, mix garlic, basil, pepper, salt, lemon juice, and 1 tablespoon of the oil.
2) Cut chicken in large cubes and put in bag to coat (smaller pieces help distribute seasoning more than if you cooked the breasts whole; also helps cook faster)
3) Heat remaining oil in skillet and then add chicken mixture until browned or cooked through.
